{Recipes} Crostini Appetizers Pt. 1
I’ve said it before. I love food. And, I think a good party must have some good, good food.
So, at my party I wanted a wonderful menu that took very little time to prepare. I didn’t want to be in the kitchen the entire night of my party! So, with the help of Martha and a post on Eat Drink Pretty I came up with some filling crostini appetizers. I created 6 simple crostini recipes that I’ll share with you in two posts. There are no step-by-step photos because they are really that easy.
Smoked Salmon with Potatoes & Chive Sour Cream

Ingredients:
Sliced French Baguette
Smoked Salmon (Trader Joes had this for a great price!),
Fresh Chives,
Sour Cream,
Garlic Salt,
Fresh Ground Pepper,
New Potatoes (or red potatoes would also work)
Directions:
1. Boil potatoes until soft (but not to mashing state) then slice into 1 inch slices
2. While potatoes are boiling chop chives finely.
Mix the chives with garlic salt and pepper into sour cream to taste.
3. Place 1 potato slice on bread, put on a dollop of chive sour cream,
and top with a small slice of the smoked salmon.
White Beans Marinated with Lemons & Capers
Ingredients:
Sliced French Baguette
2 Lemons- Zest & Juice
1/2 Jar Capers with oil
1 Cans White Beans
Directions:
1. Combine the zest and juice of two lemons with 1/2 jar of capers (with the oil) and 1 can of white beans in a sauce pan over low heat.
2. Heat the beans until warm and then set aside at room temperature for at least half an hour.
3. After the beans have sat and marinated in the lemon and capers for at least half an hour place a spoonful on bread slices.
Horse Radish & Roast Beef
Ingredients:
Sliced French Baguette
Horse Radish (I used the kind in a jar)
Thinly Sliced Roast Beef
Worcestershire Sauce
Directions:
1. Heat roast beef in a sauce pan with the Worcestershire sauce.
2. Spread a thin layer of horse radish on each piece of sliced bread
3. Top with roast beef slices.
They all sound amazing!
