There is nothing quite like a good sandwich. This sandwich is no exception. It is super simple to make, and freaking full of flavor. A big part of the flavor punch is due to the great ingredients. Believe me when I say that sometimes it makes a HUGE difference whether you buy quality ingredients over value priced items. Making a big stew? A few value items aren’t going to make a huge difference. But, when you have an item like this sandwich where there are few ingredients and you aren’t going to be changing the flavor profiles with a ton of seasoning and cooking… quality ingredients is where it is at.

Take for instance the butter in this sandwich. Sure, I could go with just any ole butter. But, a nice rich Irish or European style butter will lend a nice base for this sandwich. Heck, a great butter on a piece of bread with a sprinkle of salt is a treat in itself!

Open Faced Prosciutto Sandwich with Fig Spread and Black Pepper Cheddar

This recipe tells you how to build an individual sandwich. The amount of sandwiches you can make depends on the size of the bread that you buy and the amount of prosciutto comes in a package. Because these things are not standard, I didn’t elect to dictate serving size.

Ingredients:

Directions:

  1. Spread butter on thick slice of bread.
  2. Season with salt and pepper
  3. Spread fig spread onto butter
  4. Top with slice of black pepper cheddar
  5. Top with slide of prosciutto
  6. Enjoy!

We enjoyed these at a picnic along with my open-faced crab sandwiches. But, these would also be fantastic made in miniature and served as appetizers at your next party!

Hot summer days and sandwiches just go well together. We recently headed out for a summer time picnic (yep, back there again… I just really like picnics!) and I wanted a couple of easy, but tasty sandwiches to serve. This is one of the two sandwiches I made for the afternoon.

Open Faced Crab Salad Sandwich

Makes approximately six sandwiches.

Ingredients:

  • 4-6 oz crab (you can use freshly cooked crab or canned crab
  • juice of a lemon
  • 2 tablespoons of mayo
  • diced radishes & green onions for garnish
  • butter
  • salt & pepper
  • sliced crusty bread

Directions:

  1. Mix the crab, lemon, mayo in a bowl and set into a container
  2. Spread a thin layer of butter on a slice of crusty bread
  3. Top the bread with the crab mixture
  4. sprinkle a garnish of radish and green onions
  5. Enjoy!

I served these with a zesty side of green bean salad.

Opal Apple and Grilled Chicken Salad

Salads are one of my favorite go-to items to make for daytime events. It is an inexpensive, simple, and tasty way to feed a crowd. At my sister’s “Apple of my Eye” Sip and See party, sponsored by Opal Apple, I needed easy to make items that didn’t involve a lot of cooking. I was in an unfamiliar kitchen, so I took the super simple route and got nearly everything pre-made. This salad in particular is an easy meal to serve.

I created this salad with the crisp semi-sweet, semi-sour taste of Opal Apples in mind. Bonus, I didn’t have to worry about the apples browning as the salad sat and waited to be eaten. The non-GMO apples actually retain their bright yellow color when cut.

Grilled Chicken Salad & Opal Apple Salad

Serves approximately 6 meal-sized salads or 12 side portions. All items were bought with ease of use in mind. This salad can also be made completely from scratch and will be equally (if not more) delicious.

Ingredients:

  • 2 Bags of pre-cut and pre-washed Romaine Lettuce
  • 2 packages of pre-cooked Grilled, Sliced Chicken
  • 1 large Opal Apple thinly sliced and diced into large chunks
  • 1 1/2 cups shaved Parmesan Cheese
  • 1/2 cup sliced almonds
  • 3/4 cup Dried Cranberries (Dried Cherries would be equally as delicious!)
  • 3/4 cup house-made Apple Cider Vinaigrette (see below)

Directions:

  1. Heat pre-cooked chicken in microwave
  2. In large bowl, toss lettuce, chicken, opal apple, dried cranberries, and Apple Cider Vinaigrette
  3. Top with Parmesan cheese & Sliced Almonds
  4. Eat!

Apple Cider Vinaigrette

Ingredients:

  • 2/3 cup Apple Cider Vinegar
  • 1/3 cup Extra Virgin Olive Oil
  • 1/2 teaspoon sugar
  • Salt & Pepper to taste

Directions:

Mix all ingredients together and combine well. Add salt & pepper to taste! Seriously tasty, and simple!

Recipe for a Roasted Tomato Open Faced Sandwich

{Recipe} Italian Pressed Sandwiches

When planning the menu for my son’s first birthday I wanted to have plenty of easy adult friendly and kid friendly food. Sandwiches were the best bet in my book.

I saw this great pin via Pinterest and wanted to give making Italian Pressed Sandwiches a shot for the more adult friendly food (although, the kids ate it up too!) These sandwiches are great for mixing and matching things that you love.  **READ MORE FOR RECIPE**

Italian Pressed Sandwiches
Makes approximately 24 1 inch by  2 inch sandwiches
Ingredients:
  • Ciabatta bread: I used one very large loaf, but you can get small rolls instead if you desire, probably 6 small rolls would work
  • Italian Dressing: Any kind of Italian salad dressing will work. I use my favorite, Newman’s Own Family Recipe Italian Salad Dressing.
  • Pesto: You can buy some or make your own! I made my own by processing  pine nuts, olive oil and basil in my food processor. I made approximately 1 cup.
  • Fresh Basil leaves about 24-30 leaves
  • Roasted Red Peppers: 1 jar works
  • Three types of Italian cured meats. I used pepperoni and two styles of salami. I bought one package of each and used enough to cover a layer.
  • Provolone Cheese: 1 package of sliced cheese
  • Pepperocini: Again, you can use whatever your local market has… I used Mezzetta Deli-Sliced Golden Greek Peperoncini Peppers
  • Toothpicks
  • Heavy Books, bricks covered in foil, or a cast iron pan
Directions:
  • Slice the ciabatta bread in half
  • Spread Italian Dressing on one of the two halves of bread
  • Spread Pesto on the other half
  • Put a layer of provolone cheese on the half of bread that has the pesto. Build your sandwich from there.
  • Layer on top of it a layer of pepperoni
  • Layer on top of it a layer of salami
  • Layer another layer of salami
  • Layer on Basil Leaves
  • Layer on red peppers
  • Top with the Italian Dressing side
  • Press sandwiches by putting a heavy object on top of the sandwich! I like to put a layer of wax paper on top of the sandwiches just to keep the food safe. Keep sandwiches pressed for about 30 minutes.
  • Cut Sandwiches into 1 inch by 2 inch rectangles
  • Top each sandwich with a pepperocini by spearing the pepper and sandwich with a toothpick

 

Mmmmm… I want another one right now! You will probably have left over ingredients. That is okay, you can use them throughout the week. I’d love to know how things turn out if you make these!
